I secretly desire to ride in the Baja 500 someday. I always have. I had always thought of doing it in a buggy, but now that I ride, my new dream vacation is taking a swing at this legend of a race.
I was reading in Dirt Bike magazine a bit about this year's results. There were a lot of penalty minutes handed out.

I don't know anyone that's done the 500, but know a couple of brothers who did the 1000 in a buggy. They had a blast. I don't remember how they finished any of the times they raced. Chase crews in case of breakdown and knowing how to plan refueling stops was important.
I think I remember hearing a company based out of Lake Elsinore that was renting bikes or otherwise supporting some of the privateers in the Baja races. I just don't remember who they were.
Having driven to Cabo from San Diego a few times, the paved road isn't any worse than two lane highways here in the US. The only problem is not enough gas stations - top of the tank as soon as you see a station any time you get anywhere near 1/2 tank. Cattle also like to sleep on the hwy at night, and on the south 1/2 fog usually happens after dark.

Oh, BTW, you do know there's gravel and worse, right?
